Cauliflower is having a moment and I am fucking here for it. In a somewhat effective effort to get thin for summer, I’ve been toying with low-carb options. As anyone who has given up bread knows, after 2 days you feel so deprived and are like screw this and then eat an apple pie, so eating satisfying foods is KEY. I’ve been having this for lunch almost every day and have officially tricked my brain into thinking I am actually eating pizza when really I am basically eating a salad. Minimal prep and I have meals for the week.

Since last week’s buffalo cauliflower tacos were such a hit, I decided to make another cauliflower recipe. So far the feedback has been “it’s better than the buffalo cauliflower tacos” which, tbh, is SHOCKING, but who am I to reject such an unprecedented compliment? This week’s dish is inspired by sesame chicken that you’d get at a Chinese restaurant, except replace chicken with cauliflower. I know - bet you didn’t see that coming.

These will easily be my go-to crowd pleaser meal for the next year and tbh, writing this post has me contemplating making them for breakfast. Name one person who doesn’t need unicorn dairy-free 5 minute fudge…..go on, I’ll wait. These took me literally five minutes to prep, pop them in the freezer, and you have the cutest little grab and go fudgey, decadent desserts. Tip: like regular fudge they melt, so only take them out when you’re ready to eat them. ALSO, if you use minimal sweetener they are keto for those of you who are into that sort of thing.
