Power Bowl #1

I’m gong to start doing a superfood power bowl series so here’s bowl #1! I’ve been making this quite a bit lately because it seems to be a crowd-pleaser and is relatively easy and simple to make. It’s also PACKED with nutrition so you will be left satisfied but not stuffed.

YOU WILL NEED (makes 2):

  • 1 medium sweet potato

  • 1/2 cup quinoa

  • 1/2 avocado

  • 1-2 large beets

  • 1 tomato

  • 1 can chickpeas + whatever spices you want to season them. I used garlic powder, chili powder, onion powder, paprika, cumin, and tumeric

  • Quinoa - I was lazy and got mine from the salad bar at Whole Food’s hehe

  • Tahini dressing

  • Greens of your choice - I used a spring mix

WHAT TO DO:

  1. Preheat your oven to 375. While it’s preheating chop sweet potato and beets

  2. Add vegetables and chickpeas to a baking tray lined with parchment paper. Add spices/a little cooking spray. Cook chickpeas for 20 minutes and root vegetables for 35 minutes.

  3. If you didn’t buy your quinoa pre-made then cook quinoa. Some good pre-made options are Seeds of Change products.

  4. While your veggies and chickpeas are roasting, add greens to a bow. Chop tomato and add to greens. If you’re quinoa is pre-made/done then add to your greens/tomato.

  5. The longest part of this recipe is waiting for the root vegetables. You could make the salad dressing now too. Basically once everything is done add to the bowl and eat!
