Sometimes you just want something thick and comforting. And maybe creamy. But I digress. Here’s something else that fits the criteria.

YOU WILL NEED:

  • 1 container kite hill dairy-free ricotta

  • 1 cup cashew milk

  • 1/4 cup ghee or olive oil

  • 1/4 cup nutritional yeast

  • Spaghetti squash

WHAT TO DO:

  1. Preheat oven to 400. Cut spaghetti squash in half, remove seeds, and roast for 30 minutes with the rind up.

  2. Blend all sauce ingredients. This makes 6 portions at 190 calories each.
