Get it? Zucchini oats. Just when I thought that I couldn't possibly like overnight oats any more I discovered THIS. If you like zucchini bread then TRY IT. Not only does it taste like sweet and savory zucchini bread but it's also super simple. And good for you unlike its aforementioned muse.
YOU WILL NEED:
- 1/2 cup gluten-free oats
- 1 cup grated zucchini (I used an entire small one. Who knew small can be better sometimes?)
- 1 tbsp hemp seeds
- 1 tsp cinnamon
- 1/2 cup cashew milk
- `1/2 scoop vanilla protein powder (optional)
- 1/8 cup pecans (optional)
