Stuffed Peppers

YOU WILL NEED:

  • 4 red peppers
  • 1 cup cooked quinoa
  • 1 zucchini, spiralized
  • 1/4 cup pumpkin seeds
  • 1/2 red onion, diced
  • 1 cup butternut squash (I buy mine frozen)
  • 1 tomato
  • 1 tbsp coconut oil
  • 1 tsp cumin
  • 1 clove garlic
  • Handful fresh parsley

HOW:

  • Preheat oven to 400 degrees.
  • Prepare quinoa and set aside in a large bowl.
  • Slice the tops off red peppers and set on a baking pan lined with parchment paper.
  • Add coconut oil, red onion, cumin, and garlic to a pan and heat until onion is translucent.  
  • If using frozen squash, microwave for half the amount of time specified on the package and place in a bowl. If not add to pan with your onion and sauté until slightly soft (2-3 mins).
  • Add zucchini and tomato and sauté for another 1-2 mins.
  • Add the your veggie mix to your quinoa in the bowl and mix in parsley and pumpkin seeds.
  • Stuff into peppers and bake for 10-12 mins
