Edible Cookie Dough

Ever since I was maybe 2 years old I’ve eaten raw cookie dough. Luckily I’ve never gotten salmonella, but being old enough to know better I try to avoid food illnesses when I can. This dough is a total dupe for ‘real’ cookie dough, takes 5 minutes to make, and is basically guilt free since it’s mostly chickpeas. In-fucking-sane. Try it!

YOU WILL NEED:

  • 1 can chickpeas

  • 1/2 - 1 cup almond flour

  • 1/2 cup peanut butter

  • 1/3 cup agave

  • 2 tsp vanilla extract

  • Vegan chocolate chips

  • Vitamix or blender


WHAT TO DO (MAKES 20 COOKIES):

  1. Rinse chickpeas and add to Vitamix/blender

  2. Add PB, agave or maple syrup, and vanilla extract

  3. Blend until smooth consistency

  4. Transfer to a bowl

  5. Fold in almond flour. Start with 1/2 cup and add more until desired thickness

  6. Fold in chocolate chips

  7. Either eat RAW or freeze spoon-full drops overnight and eat frozen cookie dough bites.
