Stuffed Dates

I did a similar post a few months ago, but since then I significantly jazzed up these little treats. I made 45 and it took ~2 hours. They’re honestly super easy but bring them to a dinner party and let everyone marvel at how talented you are.

Final

Variations:

  • Pistachio with Matcha powder

  • Goji Berry and Coconut

  • Peanut butter (sunflower butter would be insane)

  • Cacao coated

  • Cashew with orange zest

  • Walnut

  • Hazelnut

  • Almond

You will need:

  • 20 Medjool dates

  • Chocolate - 2/3 cup coconut oil, 4 tbsp cacao powder, 4 tbsp maple syrup

  • ~1 handful of all ingredients listed above^, or whatever toppings you want to try

  • Mini cupcake wrappers for display

How to:

  1. Chop all of your ingredients

  2. Slice open dates with a knife the long way and de-pit

  3. Stuff with toppings and use a toothpick to pierce the date closed so it stays together while you dip it in chocolate

  4. Freeze the dates for 5 minutes while you do the next step

  5. Melt coconut oil and add maple syrup and cocoa powder

  6. Dip dates in chocolate and freeze for 5 minutes

  7. Dip again and add toppings on top then freeze overnight. If you want to remove the toothpicks do it before you freeze them!
