Winter Salad

High-key obsessed with this salad. I’m such a sugar freak so having a couple medjool dates everyday totally satisfies my sweet tooth. If you’re like this too I highly recommend trying this salad for lunch for a week straight and seeing how you feel!

YOU WILL NEED (these portions work for me but feel free to increase!)

  • 2-3 cups kale

  • 1/2 medium roasted sweet potato

  • 1/5 package Seeds of Change 7 Grain

  • 1 oz pasture raised goat cheese feta

  • 2 medjool dates

  • Pinch Himalayan salt

  • Balsamic dressing OR 1 spray olive oil

WHAT TO DO

  • Roast sweet potato. I meal prep for the week and roast 2-3 sweet potatoes at 400 degrees for 30 mins.

  • Make rice. I heat the entire packet on the stovetop with a little water. 1 packet makes 5 salads for me.

  • MASSAGE KALE. TBH I was so against doing this for years bc it sounds so ridiculous and unnecessary but you really do need to for the leaves for not like cut your mouth lol. Add a spray of olive oil or whatever dressing you’re using and literally message it into the kale for 30-60 seconds.

  • Chop dates and throw everything on the kale!
