PB Caramel Nice Cream

Lately I’ve been trying to swap healthier substitutes for junk food if I want something I don’t typically eat. Don’t get me wrong, if I’m realllly craving the real thing I’ll have it, but more and more I’d prefer not to feel sluggish. This dessert is filled with vitamins and minerals and has no refined sugar so I can eat it and still feel like a hot girl doing hot shit.

YOU WILL NEED

  • 1-2 frozen bananas - best frozen after they’ve turned slightly spotty.

  • 2-4 tbsp PB fit or regular peanut butter/nut butter of your choice. I like mine really PB flavored and find that the powdered PB provides more flavor.

  • Splash almond/coconut/oat milk

  • 2-3 medjool dates

  • 1-2 tbsp oats

  • 1-2 tbsp coconut flakes

  • Splash maple syrup

WHAT TO DO

  1. Blend bananas, PB, and nut milk in either a Vitamix or food processor, transfer to a bowl

  2. Roughly chop medjool dates. Food process or blend with oats and coconut. Mix in maple syrup.

  3. Add topping to the bananas!
