Stuffed Peppers

YOU WILL NEED:
- 4 red peppers
- 1 cup cooked quinoa
- 1 zucchini, spiralized
- 1/4 cup pumpkin seeds
- 1/2 red onion, diced
- 1 cup butternut squash (I buy mine frozen)
- 1 tomato
- 1 tbsp coconut oil
- 1 tsp cumin
- 1 clove garlic
- Handful fresh parsley
HOW:
- Preheat oven to 400 degrees.
- Prepare quinoa and set aside in a large bowl.
- Slice the tops off red peppers and set on a baking pan lined with parchment paper.
- Add coconut oil, red onion, cumin, and garlic to a pan and heat until onion is translucent.
- If using frozen squash, microwave for half the amount of time specified on the package and place in a bowl. If not add to pan with your onion and sauté until slightly soft (2-3 mins).
- Add zucchini and tomato and sauté for another 1-2 mins.
- Add the your veggie mix to your quinoa in the bowl and mix in parsley and pumpkin seeds.
- Stuff into peppers and bake for 10-12 mins
