POTATO WRAPS

YOU WILL NEED

  • 1-2 romain hearts broken into pieces
  • 1 white potato
  • 1/2 avocado
  • 2 zuchini
  • 4 stalks celery
  • Garlic powder
  • Juice of 1/2 lime

METHOD

  • Chop your potato and roast in the oven on 400 for 35 mins, flipping pieces once. I don't use oil for this just put it on parchment paper.
  • MEANWHILE, add 1 zucchini and your celery to a blender or food processor and process until slightly piecy. Set in a bowl.
  • Next add your avo, lime, garlic powder, and other zucchini and process until the texture of guacamole. Adding a zucchini to your guac bulks up your recipe without adding fat or many calories! Place into another bowl.
  • Use your romaine leaves as cups and add your potato, celery mix and guac

 

 

VEGGIE WRAPS

YOU WILL NEED:

  • 1-2 romain hearts broken into pieces
  • ¼ cup onion red onion
  • ½ a red pepper
  • ¼ cup Mushroom
  • ½ cup broccoli florrets
  • ¼ cup shreddedor finely chopped carrot
  • 1 clove garlic - minced
  • ½ inch ginger –minced
  • 1 serving crispy tofu

SAUCE

  • 1-2 tbsp sesame oil
  • 1 tbsp. RICE VINEGAR - don't omit this.
  • 1 tbsp liquid aminos
  • 1 tsp garlic powder
  • 1 tsp ginger powder

METHOD

 I use a Teflon pan to avoid COOKING with oils but I add sesame oil at the end for flavor. If you HAVE to use oil then use coconut oil as it's the only oil that doesn't turn into liquid poison if heated.

Add onion, garlic and ginger with a little bit of water on high heat and stir. When the onion turns translucent add broccoli and red pepper and a little more water. The water should soak into your veggies as you’re cooking them and then the pan will fry them. Add mushroom and carrot last as they take the least amount of time to cook. When the water has evaporated and the veggies start to stick to your pan add your sauce and tofu and stir for 1 minute.

Transfer to a dish and wrap in lettuce leave cups.

Note:  Heat does kill some nutrients so it’s best to eat your vegetables raw to maximize the amount you're getting. However, you are getting far more nutrients eating a vegetable stir-fry than say a hot pocket so it’s still a win.
