A few weeks ago I visited my #goals friend Chris in Dallas. After marveling at his home/interior design for hours, we left for yoga and lunch at The Honor Bar. He implored my to try the kale salad, explaining that it has quite the reputation. It did not disappoint and I knew I needed to recreate.
YOU WILL NEED:
Salad (makes 4):
- 4 cups kale
- 1 cup green cabbage
- 1 scallion
- 1 bunch mint
- 1 bunch cilantro
- 2 Serrano peppers
"Parmesan Cheese":
- 1/2 cup cashews
- 1/4 cup nutritional yeast
- 1/2 tbsp garlic powder
- 1/2 tbsp onion powder
- 1 tsp Himalayan salt
Dressing:
- Crushed peanuts
- 4 tbsp PB
- 2 tbsp Bragg's Liquid Aminos - or Soy Sauce if you're into that sort of thing
- 1 tbsp rice vinegar
- 1 inch ginger
- 2 garlic cloves
HOW TO:
- Chop your veggies (kale, cabbage, scallions, mint, cilantro, Serrano peppers) VERY finely. Part of the delight of this salad was how finely chopped the greens were, and how all the flavors blended together.
- Blend all "cheese" ingredients together in a Vitamix or food processor and add to greens
- Blend all dressing ingredients in a Vitamix or food processor, adding water if needed
- Add crushed peanuts for garnish
Pro tip: buy THIS. It de-stems kale and herbs in seconds!
