Un. Real. Recipe is for 6 but you might as well make 100 because they’re so good AND they take under 5 minutes to make. Before diving in, know you can indulge relatively guilt free: dates are loaded with minerals, have a low glycemic impact, and contain a ton of fiber for your digestive system.
YOU WILL NEED:
6 Medjool dates
1 packet RX peanut butter, or 2 tbsp peanut butter of your choice
1/2 bar dark chocolate OR 1/4 cup coconut oil + 1/4 cup cacao powder
Blanched, slivered almonds (optional)
WHAT TO DO:
Melt chocolate in a pan on medium heat. I used coconut oil spray to coat the sides of the pan. The chocolate melts quickly so stir it while it melts. Transfer to bowl.
COCO OIL VERSION: melt coconut oil in a pan or microwave and fold in cacao powder. You can add maple syrup, honey, or agave to optionally sweeten.
Tear dates in half and remove pit
Fill each date with peanut butter
Add in almonds
Use your fingers or tongs to dip the dates in the melted chocolate and place on parchment paper
Freeze for at least 1 hour.
