Chipotle Inspired Salad

Like most people I LOVE Chipotle. I could eat there every day, and I actually would if everything wasn't an absolute sodium bomb. A salad with only salsa, guac, and brown rice and their vinaigrette weighs in a whopping 2,470 mg of sodium and 775 calories. Every time I go there I feel my ankles swelling in my 50/50's as soon as I hit the parking lot.

So I made my own. OBVIOUSLY it's not quite as flavorful as Chipotle, but it gets the job done and comes in 2,457mg of sodium less than it's counterpart. The addition of the tortilla chips gives it the extra kick it would be missing so I encourage you not to skip them.

YOU WILL NEED:

  • Crunchy greens – I use romaine
  • ¼ cup salsa (tomato, red onion, green onion, jalepeno, cilantro sliced and let sit overnight)
  • ¼ cup black beans OR ¼ cup quinoa
  • 1/8 cup corn
  • Guacamole - mash half an avocado with lime juice and garlic powder
  • Tortilla chips for crunch – add these right before eating. If they sit in your salad in the fridge or overnight they will get soggy (optional)

I use a lime and the guac as dressing.

NUTRITIONAL STATS:

These stats are for the lettuce, corn, tomato, onion, lime, cilantro, quinoa, and 1/2 an avo.
