I started this blog as an inventory of food I make for myself since I have the propensity to eat something every day for three months and then never eat it again after being painstakingly sick of it. However, give me a year and I will likely have developed a taste for said item again. Since my memory is equivalent to that of a goldfish, if I didn’t have an inventory to refer back to I would likely completely forget about the recipe.
Anyway, that’s a long way to get to the point: this post is anything but ground breaking, but I don’t want to forget about these. Come back next week when I’ll tell you how to boil pasta.
You will need (makes one lunch/dinner for me):
2 tbsp sour cream - I used dairy-free Kite Hill (never misses)
Lettuce. Yuck.
2-3 tbsp Pico - I bought mine pre-made from Whole Foods
1 Tortilla - I used Mi Rancho Organic Flour Tortillas
1/4 cup Three cheese blend
1/4 - 1/2 cup Beyond Beef Crumbles - Plant-Based Crumbles
Spices: garlic, onion, paprika, cumin, chili, salt, pepper
What to do
Cook beyond beef as instructed. I eyeball equal parts of the spices - prob 1 tsp each
Heat tortilla in microwave for TEN seconds and not a second longer
Assemble like a little pizza
