Mexican Quinoa

The combination of spices in this is SO GOOD. Sometimes I make something and am so confused as to why people think you have to add butter, cheese, and salt to a recipe to make it palatable - looking at you Olive Garden.  The spices work well for this recipe but can honestly be added to anything when you need a little kick. TRY IT!

YOU WILL NEED

  • 1/2 cup quinoa

  • 1 tomato

  • 1/2 red onion

  • 1/2 can black beans

  • 1/2 cup corn - I used frozen

  • Big handful of cilantro

  • Juice of 1 lime

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp paprika

HOW

  • Prepare your quinoa, set aside

  • Microwave frozen corn per instructions

  • Add onion and lime juice to a teflon pan. IF you don't have a teflon pan add 1/2 tbsp coconut oil

  • Add your corn, beans, quinoa and all spices to the pan and saute for 2 mins

  • Transfer to a bowl and add mix in your tomato and cilantro
