Mexican Quinoa
The combination of spices in this is SO GOOD. Sometimes I make something and am so confused as to why people think you have to add butter, cheese, and salt to a recipe to make it palatable - looking at you Olive Garden. The spices work well for this recipe but can honestly be added to anything when you need a little kick. TRY IT!
YOU WILL NEED
1/2 cup quinoa
1 tomato
1/2 red onion
1/2 can black beans
1/2 cup corn - I used frozen
Big handful of cilantro
Juice of 1 lime
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp paprika
HOW
Prepare your quinoa, set aside
Microwave frozen corn per instructions
Add onion and lime juice to a teflon pan. IF you don't have a teflon pan add 1/2 tbsp coconut oil
Add your corn, beans, quinoa and all spices to the pan and saute for 2 mins
Transfer to a bowl and add mix in your tomato and cilantro
