The perfect winter comfort food for the lazy chef. Also, fun fact: all tuna is wild-caught. I usually get Wild Planet, which is pole and line caught and responsibly sourced. They have a no salt added version if you’re watching your sodium.
YOU WILL NEED
1 can tuna
1/2 cup mayo - I used Primal Kitchen and definitely recommend
1 stalk celery
1/4 cup capers
1/4 cup red onion
8 slices sourdough bread
1/2 - 1 block sharp Cheddar cheese - I used Kerrygold grass-fed. I recommend using more cheese and eating half if you’re watching your calories, but don’t skimp on the cheese!
Juice of 1/2 lemon
1 tbsp dried dill
Makes 4 sandwiches which can be reheated in the air fryer on 400 for 3 minutes!
WHAT TO DO
Chop onion, capers, and celery very finely
Mix tuna, mayo, and veggies, and lemon juice
Heat a non-stick pan on medium-low (I learned the hard way not to try to speed this up by blasting the heat to high)
Add cooking spray to the outside of your bread. Layer tuna mixture with sliced cheese. Cover for 2-3 minutes, flip, and cover for another 2-3 minutes.
