Asian Persuasion
As I've mentioned in previous posts, I tend to find a recipe I like and then eat nothing but that for months at a time. Befittingly, I have been ordering a sushi burrito from down the street every day for both lunch and dinner and subsequently racking up a small fortune in my Takeout category on Mint (if you don't already use this I highly recommend). I finally came to my senses and realized that in 30 minutes I could save myself ~$200 per week and just make these myself. Here you go:
YOU WILL NEED (makes 6):
For the sushi rice:
2 cups white rice
1/2 cup rice vinegar
1/4 cup cane sugar
1 tbsp sesame oil
For the filling:
Large nori rolls
3 heads broccoli
1 red onion (I buy mine pre-chopped so I'm assuming this is how much. Or just buy it pre-chopped)
1/2 purple cabbage
2 small tomatoes
1-2 heads Butter lettuce
1 - 1/2 large avocado
1 bunch mint
1 bunch basil
Extras:
Sushi mat (optional)
Wax paper to hold it together
WHAT TO DO
Honestly I usually just buy my rice pre-cooked, but it was actually very easy! Boil water, add rice, cover.
While your rice is cooking heat together the rice vinegar, sugar, and oil until the sugar dissolves. Add your cooked rice and stir until it's cooled (about 5 minutes).
Chop your broccoli, onion, cabbage, tomatoes, mint, basil
Place a nori roll on a piece of wax paper, add rice, lettuce, vegetable mixture, and a few slices of avo
Rolllllllllll!
Twist the wax paper on the ends to hold in your burrito.
Slice in half and enjoy!
